4 Things You Didn't Know About Kale

Remember kale, the original superfood? Five years ago kale was all the rage. And for good reason. #KALEYEAH!

This OG superfood is super for SO many reasons. But why? What (really) are the benefits of kale? Here are 4 things we think are extra special about this extraordinary leafy green:

1. One cup of raw kale contains nearly 700% of your daily value of Vitamin K!

Kale is literally one of the most nutrient dense foods on the planet. Vitamin K is one of those underrated vitamins, probably because it's closer to the middle of the alphabet (just kidding!) Vitamin K is a fat soluble vitamin that's most commonly known for its role in blood coagulation. But more recently, in the past several years, Vitamin K has shown to play a role in cognitive functioning. 

2. Kale is one of the best sources of Vitamin C.

In fact, one cup of raw kale contains more vitamin C than an orange! Mic drop. We all know the tremendous benefits of vitamin C for the body, but just remember that vitamin C can be temperature sensitive. Try throwing some raw kale in your salad, and lightly massage it with avocado oil or olive oil to get all the juices flowing. Good for you & yummy!

3. Kale is high in lutein and zeaxanthin, two nutrients that protect the eyes.

Let's show some more love to our eyes! Step aside, carrots. Many studies show that people who eat enough foods high in lutein and zeaxanthin have a lower risk of developing certain high disorders.

4. Did you know kale is also high in iron?

Fun fact: lightly saute kale in a cast-iron pan to level up the iron quantity in your kale. Add in a squeeze of lemon juice or orange juice, saute with red peppers, add anything with vitamin C to increase the body's ability to absorb iron from plants. Iron, especially for women's health, is such a critical nutrient.
